Ingredients:

Directions:

  1. In a mixing bowl, cream butter and sugar.
  2. Beat in egg, yolk and vanilla.
  3. Combine flour, baking powder and salt; gradually add to the creamed mixture and mix well.
  4. Form into a long log; cut into eight equal pieces.
  5. Shape each into a ball; wrap in plastic wrap.
  6. Refrigerate for 1 hour.
  7. Roll balls in additional sugar; place between two sheets of waxed paper.
  8. Roll each into a 6-in. circle.
  9. Remove top sheet of waxed paper; flip the circles onto ungreased baking sheets.
  10. Remove waxed paper; prick dough with a fork.
  11. Bake at 350°F for 10-12 minutes or until lightly browned.
  12. Carefully loosen cookies and cool on paper towels.
  13. For frosting, melt chocolate chips with half-and-half in a heavy saucepan, stirring occasionally; cool.
  14. Combine whipped cream and vanilla; fold into chocolate mixture.
  15. Layer cookies, spreading 1/4 cup frosting between each layer.
  16. Spread remaining frosting over sides and top.
  17. Decorate with chocolate sprinkles.
  18. Refrigerate overnight before cutting.
