Chocolate Chip Zucchini Bread

A very healthy low carb and sugar-free dessert!
Ingredients:
1 splenda quick pack
1 tablespoons flax oil
1/2 cup egg beaters
1 cup pumpkin, puree
2 cups almond meal
2 tablespoons unsweetened cocoa
1 1/4 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1 1/2 cup zucchini
1/2 cup chocolate chips, semi-sweet
Directions:
1. Preheat oven to 350oF. Spray 9X5 pan with cooking spray.
2. Beat together sugar ,oil, and egg beaters, until well blended. Stir in applesauce. Combine flour, cocoa, baking soda, cinnamon, and salt in a seperate bowl. Mix well. Add four mixture to sugar mixture, beating just until moist. Stir in finely shredded zucchini and chocolate chips. Spoon batter into prepared loaf pan.
3. Bake for about 45 minutes. Cool in pan 10 minutes and then cool completely on wire rack. Serving size 1 slice.
