Chocolate Chip Pancakes

A favorite with my kids.
Ingredients:
1 1/4 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs
1 cup milk
3 tablespoons vegetable oil
1/2 teaspoon vanilla extract
1/2 cup mini chocolate chip
Directions:
1. Add the first 4 ingredients to a mixing bowl; stir to combine.
2. In another smaller bowl, whisk the eggs, milk, oil, and vanilla; add to the dry ingredients and mix well.
3. Heat a non-stick griddle or skillet over medium-high heat.
4. Spray lightly or brush with vegetable oil.
5. Pour 1/4 cup batter onto griddle for each pancake.
6. Scatter approximately 10 chocolate chips (the amount is subjective, add more if you like) on top of each pancake.
7. Cook until bubbles form on the surface (about 2 minutes); flip pancake and cook until golden on the other side.
8. Serve with preferred topping.
