Chocolate Chip Oatmeal Cookies

These are from the Mennonite cookbook More With Less. They have lots of healthy ingredients but are still delicious!
Ingredients:
1 cup shortening
1/4 cup peanut butter
1/2 cup turbinado sugar (or regular sugar)
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups rolled oats
1 1/2 cups chocolate chips
1 cup nuts, chopped (optional)
Directions:
1. Cream together the first 6 ingredients.
2. Add flour, soda and salt and mix well.
3. Stir in oats, chips and nuts.
4. Drop by teaspoons on greased cookie sheets.
5. Bake at 375 degrees F for 10 minutes.
