Chocolate Chip Oatmeal Bars

These are sweet and tasty and are a healthy alternative to chocolate chip cookies. My boys wolf them down and beg for more. You can omit the coconut, or add raisins or other dried fruit. Lots of room for variation.
Ingredients:
2 cups quick-cooking oats
1/3 cup brown sugar
1/3 cup peanut butter
1/4 cup honey
1 teaspoon vanilla
1 pinch salt
1/4 cup chocolate chips
1/3 cup coconut
Directions:
1. 1. Preheat oven to 350 degrees.
2. 2. Spritz a 1 liter/2.2 quart/11x7 cooking pan with cooking spray.
3. 3. Combine all ingredients (use a mixer, this is tough by hand).
4. 4. Press down hard into the pan.
5. 5. Bake 20 minutes.
6. 6. Let cool 10-20 minutes.
