Chocolate Chip Key Lime Pie

This recipe gives the basic Key Lime pie a new flavor. Chocolate! The chocolate brings out the fresh flavor of the lime and the lime brings out the sweetness of the chocolate. This recipe does not use eggs so its a bit unique plus, you do not bake it. Read more . Its a simple recipe and I'll hope that you'll try it. We've been making it for years so its a tried and true recipe and is always on my dessert table during the holidays.
Ingredients:
crust
4 ounces butter, melted
1 cup of finely crushed ginger snap cookies
filling
1 can of sweetened condensed milk
1/2 cup key lime juice
1/2 cup mini semi-sweet chocolate chips
2 tb lime zest
2 cups of heavy whipping cream, whipped
topping
1/2 cup melted bittersweet chocolate
1/4 cup of powdered sugar
optional: 8 thinly sliced lime slices for decoration or extra whipped cream.
Directions:
1. In a large bowl, mix the cookies with the butter, combining well. Press into the base and sides of a 9 inch fluted tart or pie tin.
2. Place in the fridge to chill while preparing the filling.
3. Whisk together the remaining ingredients until thick and creamy. Spoon over the cookie base and chill for at least 1 hour.
4. Remove the pie from the tin and place on a serving plate.
5. Drizzle the melted chocolate over the top and let the chocolate set.
6. Decorate the top of the pie with a few dollops of whipped cream and some extra zest for sprinkling over the whipped cream, if desired. And serve!
