Chocolate Chip Jam Strips

Ingredients:

  • 1/3 cup. sugar
  • 1 egg
  • 2 cup. flour
  • 1/2 tsp. baking powder
  • 1/2 cup. miniature semi-sweet chocolate chips
  • 1 tblsp. shortening

Directions:

  1. Preheat oven to 350
  2. In a large bowl combine butter and sugar, beat until light and fluffy
  3. Add almond extract and egg, blend well
  4. Add flour and baking powder, blend well
  5. Stir in the 1/2 c. chips
  6. Divide the dough into 4 equal parts,on lightly floured surface, shape each part into a 12 roll
  7. Place each roll about 3 apart on 2 ungreased cookie sheets
  8. Using the handle of a wooden spoon, or your finger, make a depression about 1/2 wide and 1/4 deep lengthwise down the center of each roll.
  9. Fill each roll with 2 tblsp. of jam.
  10. Bake for 15-20 minutes or until a light golden brown, switching the sheets halfway through baking time.
  11. Remove from oven, cool 5 minutes
  12. Slice each roll on the diagonal into 12 cookies, cool completely
  13. For icing:
  14. In a small microwave safe bowl, place 1/3 c. chips and the shortening.
  15. Mike on high for 30 sec., stir, continue mike-ing, stir every 10 secs. until melted and smooth
  16. Drizzle over the cool cookies.let stand until icing is set
  17. Store in a loosely covered container.
