Chocolate Chip Cookies - Vegan

Straight from Ellen Abraham's Simple Treats, these cookies are way too yummy.
Ingredients:
1 cup oats
1/4 cup vegetable oil, canola
2 tbsp canola oil
1/2 cup maple syrup
2 tbsp maple syrup
1/2 tsp vanilla
1/2 cup chocolate chips, semi-sweet
3/4 cup walnuts, chopped
1 cup flour, whole wheat pastry or barley
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
Directions:
1. Preheat oven to 350 F.
2. Process oats in a food processor or blender until they are the consistency of coarse flour.
3. In a small bowl combine wet ingredients.
4. In a large bowl combine dry ingredients (except the chocolate chips, which you should make sure are vegan...CC didn't have vegan chocolate chips in the database).
5. Add wet ingredients to the dry. Mix well with a wooden spoon. Fold in chocolate chips.
6. Spoon onto cookie tray - makes 16.
7. Bake for 11-17 minutes, until cookies are golden around the edges. Let cool on cookie sheet for 5-6 minutes before moving to a cooling rack.
