This recipe came from my sister Carol Keates. I had to laugh when I opened it, as it is not only written out but illustrated also. She works with Developmentally Disabled Adults, so either this is a recipe she uses when baking with them or she has serious doubts about my baking abilities...LOL. You can use any type of nuts you like. I just put walnuts as the program asked for a type of nut.
Ingredients:
2 cups butter (4 cubes)
2 cups granulated sugar
2 cups brown sugar
4 large eggs
2 teaspoons vanilla
4 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
5 cups oatmeal, 1 minute cooking kind
24 ounces chocolate chips
2 cups walnuts, chopped (optional)
Directions:
1. Cream together butter, granulated and brown sugar.
2. Stir in eggs and vanilla.
3. Stir in flour, baking soda, baking powder, salt and oatmeal.
4. Stir in chocolate chips and nuts.
5. Roll into balls. Place 2” apart on a cookie sheet.
6. Bake for 10 minutes 375 degrees.
7. Cool cookies on cooking rack.
