I make these cookies every weekend for my boyfriend to bring to work... he absolutely loves them. You can switch up the recipe with whatever chips you'd like... sometimes I'll make chocolate chip/peanut butter chip cookies, butterscotch... either way they come out extremely soft and stay that way for days!!!
Ingredients:
2 1/2 cups flour
1/2 cup granulated sugar
1 cup light brown sugar, firmly packed
2 sticks margarine, softened
1 tsp. pure vanilla extract
2 tbsp. water
1 tsp. salt
1 tsp. baking soda
2 eggs
2 cups chocolate chips (or 1 package)
Directions:
1. Preheat oven to 350 degrees F
2. In a small dish, combine flour, salt, and baking soda
3. In a larger dish, combine granulated sugar, brown sugar, and butter and beat until soft
4. Add in vanilla, water, and eggs to sugar/butter combination. Continue to beat until creamy
5. Slowly add in flour mix to the larger bowl and mix together until you create a batter
6. Add in chocolate chips and mix in with the batter
7. Using measurements of a tablespoon, drop 12 rounded balls of dough onto a baking pan
8. Bake in the oven for approximately 9 - 10 minutes
9. Let cookies sit on baking pan for 5 minutes before moving to wire rack to cool
10. Cookies WILL APPEAR TO BE a bit undercooked if eaten right when they come out of the oven... by not cooking them until full golden-brown, they stay extremely soft and chewy for days
