I found this recipe in an old cook book and had one ripe banana on hand. I made them for a neighbor who had surgery and had a hard time giving them away because they are SO delicious.
Ingredients:
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup margarine, softened
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 banana, mashed
1 egg
1 teaspoon vanilla
1 cup milk chocolate chips
Directions:
1. Preheat oven to 375°F; lightly grease cookie sheets.
2. Place flour, baking powder and salt in small bowl; stir to combine.
3. Beat butter and sugars in a large bowl with electric mixer at medium speed until light and fluffy. Beat in banana, egg and vanilla. Add flour mixture. Beat at low speed until well blended. Stir in chocolate chips. ( dough will be soft).
4. Drop rounded teaspoonfuls of dough 2 inches apart onto prepared cookie sheets.
5. Bake 9 to 11 minutes or until edges are golden brown. let cookies stand on cookie sheets 2 minutes. Remove cookies to wire racks, cool completely. Store tightly covered at room temperature.
6. Note: these do not freeze well.
