Chocolate Chip Banana Muffins

Yum. Opted to add chocolate chips instead of icing the tops. I accidentally used baking powder instead of baking soda and it turned out great. Banana flavour is mild (so hubby will eat)- if you'd like it heartier, add another banana.
Ingredients:
1/4 cup shortening
1 cup sugar
1 egg
2 mashed ripe bananas
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips
Directions:
1. Preheat oven to 350°F Place paper liners in muffin cups.
2. In a small mixing bowl, stir together flour, baking soda and salt.
3. In a large mixing bowl, cream shortening and sugar.
4. Add egg and beat well.
5. Add bananas and vanilla. Mix well.
6. Stir dry ingredients into wet.
7. Fold in chocolate chips.
8. Scoop into muffin cups.
9. Bake for 23-28 minutes.
