Chocolate Chip Banana Bread Muffins

Yummy twist on a classic breakfast treat
Ingredients:
2 1/4 c mashed overripe banana
2 large eggs
1/4 c chocolate chips
1/2 c old fashioned oats
2 c all purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 c (1 stick) softened butter
3/4 c brown sugar
1/4 c granulated sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp vanilla extract
Directions:
1. Preheat oven to 350
2. Mash bananas and mix with chocolate chips, set aside
3. cream together butter and sugars
4. beat in egg and vanilla
5. add banana and choc chip mixture, set aside
6. In seperate bowl, mix flour, oatmeal, salt, baking soda, cinnamon and nutmeg
7. add flour mixture to butter mixture until moist, be careful not to overmix.
8. Pour into greased muffin tins
9. bake 25-30 minutes.
10. I use jumbo muffin pans and this recipe will make 9 jumbo muffins, if you use smaller muffin pans, adjust cooking time accordingly.
