Ingredients:

Directions:

  1. In a small saucepan over medium heat, bring the water, butter, sugar and salt to a boil.
  2. Add flour all at once; stir until a smooth ball forms.
  3. Remove from the heat; let stand for 5 minutes.
  4. Add eggs, one at a time, beating well after each addition.
  5. Continue beating until mixture is smooth and shiny.
  6. Drop by 2 rounded tablespoonfuls 3 in. apart onto greased baking sheets.
  7. Bake at 400° for 30-35 minutes or until golden brown. Remove to wire racks.
  8. Immediately split puffs open; remove tops and set aside.
  9. Discard soft dough from inside.
  10. Cool puffs.
  11. Let whipped topping stand at room temperature for 30 minutes.
  12. Meanwhile, in a small saucepan over medium heat, bring sugar and milk to a boil; cook and stir until sugar is dissolved.
  13. Reduce heat to low; stir in chocolate until melted.
  14. Transfer to a large bowl.
  15. Cool to room temperature, about 25 minutes, stirring occasionally.
  16. Fold in whipped topping.
  17. Fill each cream puff with a heaping tablespoonful of cherries; top with chocolate filling.
  18. Replace tops.
  19. Dust with confectioners' sugar; serve immediately.
  20. May drizzle tops if desired with chocolate
  21. Refrigerate leftovers.
