This is an easy recipe for a chocolate coffee type fudge.. it another type that should come out without crystallizing in hot or humid climates... I don't know how many servings but it makes 2 3/4 pounds of candy.
Ingredients:
1 tbsp. instant coffee granules.... get a good coffee
1 tbsp. hot water
2 cups sugar
1 cup evaporated milk
1/2 cup butter
1 ( 12-ounce ) bag of semisweet chocolate morsels
1 ( 7-ounce ) jar marshmallow cream
1 cup chopped pecans
1 tbsp. finely grated orange rind
2 teasp. orange or orange extract
2 teasp. brandy extract
Directions:
1. Combine the coffee granules and the water.
2. stir until the granules are dissolved...... set aside
3. combine the sugar, milk, and butter in a large saucepan
4. cook over medium heat until mixture comes to a boil, stirring constantly
5. boil 10 minutes.... stirring constantly.... remove from heat after the 10 minutes
6. add chocolate morsels and the marshmallow cream... stirring until melted
7. stir in coffee mixture, pecans, orange rind and the orange and brandy extracts ... mix well
8. spread mixture evenly in a well buttered 13 x 9 x 2-inch pan
9. cover and chill.
10. cut into squares
11. store in refrigerator
12. yields : 2 3/4 pounds
