Chocolate Cake With Mocha Glaze

Ingredients:
cooking spray
1 teaspoon sifted cake flour
1/3 cup unsweetened cocoa
1 ounce sweet baking chocolate, chopped
1/2 cup boiling water
1 3/4 cups sugar
1/4 cup butter or stick margarine, softened
2 tablespoons vegetable oil
2 1/2 teaspoons vanilla extract
2 large eggs
2 1/4 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups low-fat buttermilk

Directions:
1. Preheat oven to 350°.
2. Coat a 13- x 9-inch baking pan with cooking spray, and dust with 1 teaspoon cake flour; set aside.
3. Combine cocoa and chocolate in a small bowl; add boiling water, stirring until chocolate melts. Set aside.
4. Combine sugar, butter, and oil in a large bowl; beat at medium speed of a mixer about 2 minutes or until well blended. Add vanilla and eggs; beat well.
5. Combine 2 1/4 cups cake flour and next 3 ingredients. Add flour mixture to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat in chocolate mixture.
6. Pour batter into prepared pan. Bake at 350° for 30 to 32 minutes or until a wooden pick inserted in center comes out clean.
7. Let cool completely in pan on a wire rack. Spread Mocha Glaze over cooled cake.
