Chocolate Cake With Creme De Cacao Icing

Chocolate yummmmmmm.
Ingredients:
1/2 cup unsweetened cocoa powder
note: use a good quality cocoa and i sometimes add a heaping tablespoon extra.
1 tablespoon instant dry roasted coffee powder
1/2 cup hot water
1/2 milk
1-3/4 cups cake flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 cup butter
1-1/4 cups granulated sugar
2 eggs
1/2 teaspoon pure vanilla extract
coffee cream frosting
1 tablespoon instant coffee powder
1 tablespoon crème de cacao
1 cup chilled all-purpose whipping cream
1/4 cup confectioners' sugar
note: i double the frosting recipe

sliced fresh strawberries, mandarin orange segments(drained), or any fruit of your choice.
Directions:
1. Preheat oven to 350 degrees F.
2. Grease and line two 9 inch round layer pans and place to one side.
3. Dissolve cocoa powder and coffee in hot water.
4. Add milk then set aside.
5. In another bowl, combine cake flour, baking powder and baking soda. Set aside.
6. Cream butter and sugar until light and fluffy.
7. Add eggs, one at a time, beating well after each addition.
8. Stir in vanilla.
9. Add the flour mixture alternately with the liquid ingredients into the creamed mixture.
10. Pour into prepared pans and bake for 20-25 minutes or until toothpick inserted in the center of the cake comes out clean.
11. Cool.
12. FROSTING:
13. In a bowl, combine instant coffee, crème de cacao and all-purpose cream.
14. Whip until stiff and double in volume.
15. Fold in the confectioners' sugar.
16. To Assemble:
17. Put the first layer of cake on a platter.
18. Spread some of the coffee cream frosting over the cake then top with half of the fresh fruits.
19. Put second cake layer.
20. Top with remaining coffee cream and fruit.
21. Chill before serving.
