Both of my daughters had to submit chocolate recipes for a 5th grade mothers day cookbook project. There were a lot of really good ones, but my favorite ended up being two separate recipes that i combined and then added my own touches to. You might think this is way too runny to work, but it ends up wonderful!
Ingredients:
3/4 cup cocoa
1 3/4 cups unsifted flour
2 cups sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon instant coffee
2 eggs
1 cup milk
1/2 cup vegetable oil
1 cup boiling water
1 cup sugar
1/3 cup baking cocoa
3 tablespoons cornstarch
1 cup water
3 tablespoons butter, cubed
1 teaspoon vanilla extract
Directions:
1. For the cake: Preheat oven to 350 and spray a 9x13 inch cake pan with nonstick spray like Pam.
2. Mix all ingredients except the boiling water together in a large bowl at medium speed for about 2 minutes or until well mixed, then add the boiling water and stir just until well blended. Pour into cake pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Let cool completely, then pour on the glaze.
3. For the glaze: In a saucepan, combine the sugar, cocoa, cornstarch, and water until smooth. Bring to a boil over medium heat, stirring constantly. Cook and stir for 1-2 minutes or until thickened. Remove from heat and stir in the butter and vanilla until the glaze is smooth. Cool to lukewarm. Stir, then spread over top of the cake. Let stand until set. Refrigerate leftovers.
