I love baking with buttermilk,cornbread,biscuits etc.But I always have some left over and must bake something else to use it up.I have been making this for years and just love it.Makes a great gift.I find this makes a lot of batter,if any left I make a mini laof.
Ingredients:
1/2 cup butter
1 cup sugar
2 eggs
1 cup buttermilk
1 3/4 cups flour
1/2 cup unsweetneded cocoa powder
1/2 tsp.baking powder
1/2 tsp.baking soda
1/2 tsp.salt
1/3 cup pecans,chopped (optional)
glaze
1/2 cup butter
1/4 cup cocoa powder
5 tbls.milk
1 tsp.vanilla
1/2 cup chopped pecans
16 ounces,powdered sugar
i find this bread so rich i never glaze it but am adding it anyways.
Directions:
1. Preheat oven to 350.Grease only the bottom of a 9X5 loaf pan.
2. In a large bowl,cream ogether butter aand sugar until light and fluffy.Beat in the eggs,one at a time,then stir in buttermilk.
3. Combine the flour,1/2 cup cocoa,baking powder and soda and salt;stir into the buttermilk mixture until moistened.
4. Mix in nuts if using.
5. Pour into prepared pan.
6. Bake for 55-65 minutes in peheated oven,until a toothpick inserted,comes out clean.
7. Cool in pan for 15 minutes before removing to a wire rack to cool completely.
8. Combine glaze ingredients;
9. The butter,1/4 cup cocoa,and milk in a saucepan over medium heat.Cook,stirring until melted and smooth.remove from heat and mix in the vanilla and powdered sugar.Stir in remaining nuts.Spread on top of cooled loaf.
