Chocolate Banana Bread

A rich, dark and moist quick bread that is actually low in fat. It can easily be doubled to make two loaves instead of one. I get lots of requests for that one.
Ingredients:
1-1/2 cups all-purpose flour
1-1/4 cups sugar
6 tablespoons cocoa
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
2 eggs
1/4 cup oil vegetable oil
3 bananas, thoroughly ripe and mashed with a bit of lemon juice
2 tablespoons confectioner's sugar for dusting (optional)
Directions:
1. Heat oven to 350F.
2. Combine flour, cocoa, salt, baking powder, baking soda, and cinnamon
3. With an electric mixer, cream eggs, oil and sugar until silky smooth, then add mashed bananas
4. Add egg-banana mixture to the flour mixture.
5. Blend well on medium speed about 2 minutes.
6. Pour into well greased and floured 9 x 5 inch loaf pan (you can use a bit of the flour mixture).
7. Bake 45 minutes and test for doneness.
8. Set on wire rack to cool for 15-20 minutes.
9. Turn out and cool completely.
10. Dust with confectioner’s sugar.
