Chocolate Apple Loaf With Macadamia Nuts

This is a special recipe for a special Christmas time.
Ingredients:
2 large tart apples ( granny smiths), peeled, cored and grated
1 tablespoon fresh lemon juice
1 cup all purpose flour
1/4 cup + 1 tablespoon cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup vegetable oil
2 large eggs, separated
1/2 cup macadamia nuts, coarsely chopped
2 tablespoon confectioners' sugar
Directions:
1. Preheat oven to 350 F. Butter a 9 x 5 inch loaf pan. line with waxed paper.
2. Drizzle thae apples with lemon juice.
3. Sift the flour, sugar, cocoa, baking powder, baking soda, and salt into a large bowl. Stir in the sugar.
4. Beat in the oil and egg yolks with an electric mixer at low speed until just blended.
5. Stir in the apples and nuts.
6. With mixer and high speed, beat the eggs whites, in a medium bowl until stiff peaks form. Use a large rubber spatula to fold them into the batter. Spoon the batter into the prepared pan.
7. Bake for 50 - 60 minutes, or until toothpick inserted into the center comes out clean.
8. Cool the loaf in the pan for 15 minutes.
9. Turn out onto a rack. Carefully remove the paper and let cool completely.
10. Dust with the cocoa ant he remaining 1 tablespoon confectioners' sugar.
