Chocolate And Mint Chip Banana Bread

This is the most unique banana loaf I have in my files. Not overly sweet, low fat and mostly sugar free. However the mint and banana flavor actuallly was a very pleasing combination. . Of course all chocloate chips may replace the mint if one does not prefer mint. Read more .It's a nice once in a while combo if one wants something unique. I post it here if anyone wants to try it! Remember it's not overly sweet and one probably one could add more Splenda if desired and tweak the recipe if they wish
Ingredients:
2 cups all purpose flour
1/4 cup splenda ( or sugar )
1 tsp baking powder
1/2 tsp baking powder
dash salt
2 large eggs
1 tsp vanilla
1 very large ripe banana
2 1/2 oz oil
2 1/2 oz skim milk
4 oz choclate and mint chips
2 oz chopped pecans
Directions:
1. Grease and flour a loaf pan ( 8 x 4 or 9 x 5 ) batter should fill halfway full
2. Mash banana to a puree
3. In a bowl with electric mixer beat the eggs, oil, milk and banana
4. In another bowl mix all the dry ingredients
5. Add banana mixture to dry mixture and beat just until smooth
6. Mixture will be thick
7. Stir in the nuts and chocolate and mint chips
8. Place mixture in a well greased pan
9. Bake in a 350 F oven until tested done in the center, about 45 to 50 minutes
10. Cool in pan 10 minutes
11. remove to cool completrly
12. Wrap and slice the next day
13. May be frozen
