I have had this recipe for some time and am posting it for a dear zaar friend - I'm Pat. This recipe is so Pat may be able tomay make individual puddings and add nuts to her own pudding! Easy and quick to make on a cold winters night! As every microwave is different and you need to consider your own microwaves power. It may take less or longer to cook these. It may be better to cook them on medium high. Two tablespoons of chopped macadamias or hazelnuts can be added to this recipe if prefered.
Ingredients:
60 g butter
1 1/2 cups self-raising flour
1/3 cup caster sugar
1/4 cup cocoa
1 cup milk
2 teaspoons vanilla extract
2/3 cup brown sugar, lightly packed
1/4 cup cocoa, extra
2 cups boiling water
Directions:
1. Place butter in a large microwave-proof dish and melt at 350W for 60 seconds.
2. Stir in sifted flour, caster sugar, and cocoa. Add the milk and vanilla and beat with a wooden spoon until mix is smooth.
3. Spoon mixture into individual microwave-proof containers.
4. Combine extra sifted cocoa and brown sugar and sprinkle equal amounts onto each pudding. Carefully pour the boiling water slowly over the back of a large metal spoon and over the pudding mixtures.
5. Cook for 6-10 minutes, until springy~soft and just cooked in the centre remove and stand for 3 minutes before serving.
6. N.B.As every microwave is different and you need to consider your own microwaves power. It may take less or longer to cook these. It may be better to cook them on medium high. Your microwave may take longer so keep an eye on times.
7. Sprinkle each pudding with icing sugar and serve with ice-cream or cream.
