There were some beautiful strawberries in the market today, and we could not resist. I knew i had some decatant chocolate at home and have been craving choux pastry for weeks. Luckily my hubby has no problem cleaning up my messes from my experiments and i'd say they went over quite well considering the two older kids each had 3 and my 17 month old has a whole one, no problem.
Ingredients:
pastry
1/2 cup (1 stick) butter
1 cup water
1/2 teaspoon salt
4 eggs, room temp ( i put mine in a bowl with very warm water, much faster)
1 cup flour
'mousse
1 1/2 cups hulled strawberries, hulled (measure after running through food processor. (it's about 2 cups whole)
1 pkg strawberry flavored gelatin
1 pint whipping cream, whipped
'topping
3 oz melted chcoclate
Directions:
1. Bring butter and water to a boil in medium saucepan.
2. Add flour in all at once and stir until it begins to pull away from sides and forms a ball in the center of saucepan.
3. Let cool for 5 minutes.
4. Beat eggs in one at a time until smooth.
5. Drop on well greased baking sheet a couple of inches apart, you can either make long or small eclairs or big or small puffs, your choice.
6. Bake in a preheated 400 degree oven for 30 minutes or until golden brown. Do not overbake!!!
7. Remove to cooling rack and cool til you can handle, slice open with a serrated knife and remove dough in middle, allow to dry 30 minutes to 1 hour before filling.
8. Bring strawberries to a boil in a saucepan, remove from heat and add the gelatin. Pour into a bowl and let sit till almost set. Carefully fold in whipped cream, refrigerate.
9. When mousse is set and puffs are completely cool, fill each puff with mixture and drizzle with melted chocolate. ( i melted 3 oz of semi sweet in the microwave, slowly)
