These are heavenly Christmas cookies my husband makes every year. He got the recipe from the local paper and people just rave about them. They are perfectly decadent; the ultimate cookie!
Ingredients:
1 cup butter, room temperature
1/2 cup sifted powdered sugar
1 teaspoon vanilla extract
2 1/4 cups flour
1/4 teaspoon salt
4 ounces cream cheese
1 cup sifted powdered sugar
1 tablespoon flour
1/2 teaspoon vanilla extract
1/4 cup chopped pecans
1/4 cup flaked coconut
1/2 cup semi-sweet chocolate chips
1 tablespoon butter
1 tablespoon milk
1/4 cup powdered sugar
Directions:
1. Preheat oven to 350.
2. In medium bowl, mix butter, powdered sugar, flour, salt and vanilla thoroughly.
3. Roll dough into 1-inch balls and place 1 inch apart on ungreased cookie sheets.
4. Press thumb gently into center of each cookie to make impression.
5. Bake in preheated oven 12-15 minutes or until done.
6. Remove from oven and cool completely.
7. While cookies cool, prepare filling and chocolate drizzle.
8. Filling:.
9. In bowl, combine cream cheese, powdered sugar, flour, vanilla, pecans and coconut. Mix Well.
10. Chocolate Drizzle:.
11. Combine semi-sweet chocolate chips, butter, milk and powdered sugar in top of a double boiler. Cook over low heat until melted, stirring until smooth.
12. Once cookies are cooled, fill indentations with filling, then pipe on the chocolate drizzle (you can also just use a spoon to drizzle).
