Chinese Style Frittata Mushroom and Tomato

This is a common Chinese egg dish that is fast and light. Doesn't require oven; will cook in the pan on the stove.
Ingredients:
4 whole eggs
3/4 cup cherry tomatoes, sliced
1/2 cup mushrooms, sliced
1/4 cup scallions, chopped
1/8 teaspoon salt
1/2 teaspoon canola oil
Directions:
1. Whisk eggs in a bowl with a little bit of water to thin it out. Add pinch of salt.
2. Heat oil in a medium saucepan and sautee mushrooms until slightly browned. Remove from heat and wipe pan clean.
3. Add more oil, and add egg mixture. Under medium low heat, gently stir eggs with a spatula using figure 8 motions until slightly set.
4. Add tomatoes, mushrooms, and scallions and allow eggs to cook all the way through. Cover with lid to allow steam to fluff up the eggs.
5. Garnish with more finely chopped scallions.
