Chinese Scrambled Eggs With Shrimp

Ingredients:
1/2 pound shrimp peeled and deveined
1 teaspoon sherry
1/2 teaspoon cornstarch
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
6 eggs lightly beaten
chopped cilantro to garnish
Directions:
1. Combine shrimp, sherry, cornstarch, salt and pepper in a small bowl and toss to combine.
2. Marinate for 10 minutes.
3. Heat the vegetable oil in a skillet over moderate heat and sauté shrimp for 3 minutes.
4. Add eggs and cook stirring frequently.
5. Sprinkle with cilantro.
