Chinese Red Barbecued Pork

This is a recipe for that pork you see in Chinese dishes that is so beautifully red on the outside. The recipe comes from an Australian Women's Weekly Chinese Cookbook that is my bible for Chinese recipes. I have made this pork many times for my Wor Won Ton soup, pork buns, fried rice, etc. Read more . and it turns out beautifully each time.
Ingredients:
2 12 oz. pork tenderloins
1/4 cup soya sauce
2 tbsp. dry red wine
1 tbsp. honey
1 tbsp. brown sugar
2 tsp. red food colouring
1 clove garlic
1/2 tsp. cinnamon
Directions:
1. Combine the soya sauce, red wine, honey, brown sugar, food colouring, crushed garlic and halved shallot in large bowl. Sprinkle cinnamon on top, add pork, marinate one hour, or cover and refrigerate overnight; turn occasionally.
2. Drain pork fillets from marinade, reserve marinade. Put pork on wire rack over baking dish.
3. Bake in moderate oven (325 F.) 30 minutes, turning frequently with tongs and basting frequently with marinade.
4. Remove from oven, put on board and allow to cool. Cut pork into diagonal slices to serve or add to Chinese recipes.
