Chinese Prawn And Veg Patties

Light and tasty made with stir fried veg and prawns, serve warm with sweet chili dipping sauce
Ingredients:
veg oil for frying
3 shallots, thinly sliced
2 crushed garlic cloves
1 green pepper chopped
1 stick celery, chopped
85g-3oz beansprouts
114g-4oz peeled prawns
5 beaten eggs
sweet chili sauce
Directions:
1. in a wok stir-fry the shallots, garlic, green pepper and celery for 3 min
2. add beansprouts and stir-fry another 2 min.
3. add the prawns and cook for a further min.
4. let cool
5. add the beaten eggs
6. add oil to the pan
7. when hot ladle one 1/4 of the mix to the oil and fry for 2 min
8. carefully turn over and cook the other side
9. drain and keep warm while cooking the rest
10. serve warm with sweet chilli sauce
