Chinese Noodle Salad Pea Salad

I got this from my best friends sister, years ago. When I have to bring a salad somewhere, this is the one I take.
Ingredients:
dressing
1/2 cup mayonaise (not miracle whip)
2-3 tsp. fresh ginger root, peeled and grated.
1/2 tsp. garlic powder
1/2 tsp. dry mustard
1 tsp. soy sauce
salad
1- 8 oz. can water chestnuts, chopped
4 sliced green onions
1 stalk thinly sliced celery
1- 10 oz. pkg. frozen peas - thawed and drained
topping
1 - 5 oz. can crisp chinese noodles.
Directions:
1. When mixing the dressing, make sure that the ginger root is very finely grated. Mix all ingredients together.
2. Place salad ingredients in a bowl and mix with dressing, cover and chill for several hours.
3. When ready to serve, toss in Chinese noodles or use like croutons on each plate.
