Chinese Cucumber Salad

This is a nice refreshing salad to have alongside a spicy entree.
Ingredients:
3 cucumbers
1 teaspoon salt
3 tablespoons soy sauce
2 cups rice wine vinegar
1 tablespoon sugar
1 teaspoon sesame oil
2 tablespoons scallions, finely chopped
1 tablespoon fresh gingerroot, finely chopped
Directions:
1. Peel cucumbers.
2. Slice thinly.
3. Mix remaining ingredients and pour over cucumbers.
4. Stir carefully.
5. Chill.
