Chinese Chicken Stir-fry

The main reason why I love this dish (aside from the fact that it is soooo good) is because it is so versatile. You can use any type of vegetables that you like, and you can vary the amount. Below is how I like it. Read more . I hope you enjoy it as much as we do
Ingredients:
3 large boneless, skinlees chicken breasts
1 small zuchinni
1 yellow squash
1 small red pepper
1 small green pepper
2 onions
5 mushrooms
1 can baby corn (optional)
sauce
1/4 cup soy sauce
1/4 cup water
1 teaspoon sugar
1 tablespoon corn starch
Directions:
1. cut all your veges into bite size pieces.
2. saute the vegetables (NOT the baby corn), adding each one at a time
3. let cook for about 10 minutes, until the veges are soft
4. add the chicken breasts, which you have cut in either bite size, chunks (I prefer chunks) or strips
5. let cook an additional 10 min or more (depending on how large you cut the chicken)
6. next add the baby corn, cut in bite sized pieces
7. mix together in a seperate bowl all the sauce ingredients
8. now add the sauce
9. let cook a few min more (you dont want to overcook it or it will turn into mush)
10. Eat and Enjoy!
