Ingredients:
1 spring chicken, cut into small pieces
1 piece of ginger, bruise
pinch of white pepper
pinch of salt
piece of celery
piece of leek
6 cups of spring water
Directions:
1. boil in a wok of boiling water for 3 minutes, drain
2. bring spring water to the boil add chicken pieces,
3. add ginger, celery and leek, cover and cook for 20 minutes add salt and white pepper, cover and cook for another 20 minutes,
4. turn off the heat, don't open the lid for at least 10 minutes, serve
