Chinese Cabbage Broth With Fried Fish

This dish is normally cooked in seychelles after a night of partying to refresh the body...it taste great and is very healthy.may also be used as an alternative of chicken soup for the sick
Ingredients:
1 large green chinese cabbage (large spinach may also be used as an alternative)
1 kilo fresh raw fish pieces
1 tbs crushed garlic
1tbs crushed ginger
1 large red tomato (thinly sliced)
1 large onion (thinly sliced)
3 tbs vegetable oil (sunflower)
(more for frying the fish)
2 tbs lemon juice
salt and pepper to taste
1litre and a half vegetable stock or plain water
Directions:
1. Cut the bottom of the chinese cabbage and discard
2. roughly chop the cabbage and rinse under clean running water and drain
3. heat the 3 tbs of oil in a large pan and stir fry the garlic, ginger and onions until fragrant.
4. add the chinese cabbage and stir fry for about a minute.
5. add the tomato
6. pour the stock over and simmer on medium heat
7. in the mean time flavour the raw fish with salt and pepper
8. heat some oil in a non stick pan and fry the fish pieces turning once until golden brown.
9. drop in the boiling broth as you remove from the frying pan.
10. once done allow the broth to boil on high heat for about 5 minutes.
11. the chinese cabbage should be cooked and the liquid reduced but not too much.
12. remove from heat. season with salt and pepper.
13. pour over cooked white rice and enjoy....
14. may also be enjoyed with a dash of crushed chilli
