Chinese Barbecue Sauce (Char Siu)

This is a wonderful sauce that can be used for chicken, pork, beef. I have even used this as a dipping sauce for my egg rolls.
Ingredients:
1/2 cup dry cooking sherry
1/2 cup hoisin sauce
1/2 cup soy sauce
1/2 cup sugar
6 garlic cloves, minced
1 tablespoon black bean paste
1 teaspoon five-spice powder
1 tablespoon chopped shallot
1 teaspoon salt
Directions:
1. Mix ingredients in the top of a double boiler and simmer 10 to 15 minutes.
2. Allow sauce to cool before using.
