Very nice sauce to serve with chicken and pork. I serve this over Pork Tenderloin
Ingredients:
1 1/2 cups italian parsley, packed
1 1/2 cups cilantro leaves, packed
1/2 cup olive oil
1/4 cup red wine or 1/4 cup sherry wine vinegar
2 garlic cloves, peeled
3/4 teaspoon cumin
3/4 teaspoon kosher salt
2 tablespoons carrots, finely shredded
2 tablespoons chilies, seeded, minced
Directions:
1. Combine first 7 ingredients in a food processor; process until almost pureed.
2. Stir in carrots and chiles.
3. This sauce can be made 1 day ahead and refrigerated.
