Chilli Pork Spareribs

Really easy, make the marinade, set aside, and put in oven. tender honey chilli ribs, better than any takeaway! use as starter or main course!
Ingredients:
1kg/ 2lb lean pork ribs
for the marinade
2.5cm/ 1'' fresh root ginger grated
2 garlic gloves crushed
4 tblsp clear honey
4 tblsp white wine vinegar
2 tblsp light soy sauce
2 tblsp dry sherry
1 x 142g /5oz can tomato puree
1 tsp chilli powder
1 or 2 dried red chillis ( depending on taste) cut up small inc seeds

Directions:
1. combine all marinade ingredients and mix well
2. cut spareribs into bitsize peices
3. place ribs in roasting dish
4. cover with marinade
5. if time allows, set aside for 1 hour
6. cook at 160 degrees for 45 - 60 mins basting every 15 mins and turning half way through.
7. Turn off oven and rest 15 mins
8. enjoy.
9. serve with lemon finger dip and napkins
