Chilled Zucchini Soup

Good to take on picnics, since it isn't served wartm, and zucchini is abundant in summer.
Ingredients:
1 cup chopped onion
3 tablespoons vegetable oil
1 1/2 lbs zucchini, cut into 1/2 inch pieces
3 cups chicken broth
2 cups half-and-half
2 tablespoons chopped fresh parsley
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon white pepper
Directions:
1. Saute onion in oil in a large saucepan until tender. Add zucchini; cover and cook 5 minutes; stirring occasionally. Stir in broth and remaining ingredients; cover, reduce heat, and simmer 15 minutes ot until zucchini is tender. remove from heat; cool.
2. Pour about one third of mixture into blender or food processor; process until smooth. Repeat procedure twice with remainig mixture. Serve cold.
