Ingredients:

Directions:

  1. In a large skillet heat butter and oil; saute onion.
  2. Add broth, salt, pepper, squash, and basil.
  3. Cook over low heat 10-12 minutes, stirring occasionally.
  4. Let cool.
  5. Puree in blender in portions.
  6. Season to taste with white pepper.
  7. Chill.
  8. When ready to serve, garnish each bowl with a dollop of sour cream or yogurt.
