Chilled Peachy Ginger Soup (Low-Fat)

Great flavors. A summer soup that you'll love, and it's actually healthy!
Ingredients:
4 cups sliced fresh peaches (reserve one peach)
1/4 cup minced candied ginger
1/4 cup plain fat-free yogurt
1 1/4 cups skim milk
1/4 teaspoon ground nutmeg
1/4 teaspoon cinnamon
Directions:
1. In a food processor, blend the peaches and ginger until smooth.
2. Transfer peach mixture to a large bowl.
3. Add the yogurt, milk, spices.
4. Mix well.
5. Dice the reserved peach.
6. Stir in diced peaches.
7. Chill soup until serving time.
8. If desired, garnish with a small dollop of yogurt sprinkled with slivered candied ginger.
