Chilled Mushroom Salad

Easy to make. Preparation time does not include chilling.
Ingredients:
8 ounces fresh mushrooms, cleaned and sliced
2 tablespoons olive oil
3 tablespoons lemon juice
1/4 teaspoon tarragon
1/4 teaspoon granulated sugar
1/4 teaspoon kosher salt
parsley (to garnish) (optional)
Directions:
1. Mix ingredients for the vinaigrette in a small bowl
2. In a large bowl, toss mushroom slices with vinaigrette.
3. If you want you can garnish with a little parsley.
4. Chill before serving.
