Chilled Garbanzo And Potato Salad With Onion And G...

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dubach Estate in Combine, Texas in 1984.
Ingredients:
2 pounds red potatoes
3 italian plum tomatoes
1/2 medium red onion minced
16 ounce can garbanzo beans
1/4 pound fresh spinach
dressing
1 tablespoon extra virgin olive oil
2 tablespoons red wine vinegar
4 cloves garlic minced
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon fresh parsley minced
1/2 cup water
1/4 teaspoon crushed dried hot red chilies
Directions:
1. Wash and scrub potatoes and cut into bite size pieces.
2. Combine all dressing ingredients in a small bowl then allow to sit a few minutes.
3. Bring 6 cups of water to a boil in a saucepan then add potatoes.
4. Bring to a boil and boil 5 minutes then drain potatoes and rinse well under cold water.
5. Drain beans and rinse thoroughly under cold water.
6. Cut tomatoes into bite size pieces but smaller than potato pieces.
7. Chop up spinach then mix everything together including the dressing.
8. Cover bowl and chill at least 4 hours tossing twice to make sure dressing coats everything.
9. Serve at room temperature.
