This is from and I'm not sure if it's brunch, lunch or dinner. I guess it could be any of them.
Ingredients:
8 ounces ground beef
4 tablespoons butter, divided
8 (6in) flour tortillas, torn into strips
3 eggs, beaten
3/4 cup enchilada sauce( i would use hot)
1/2 cup sliced black olives
1/4 cup chopped green onions
1/2 cup sour cream
1/2 cup shredded cheddar cheese
Directions:
1. Brown beef in a large skillet , drain and remove from pan
2. Melt 2 tablespoons of butter in the skillet
3. Add torn tortillas and brown lightly
4. Push the tortillas all the way to the outside edge of the pan
5. Add remaining 2 tablespoons butter and melt
6. Pour in the beaten eggs and scramble until soft set
7. Push the eggs to the outside edge and add browned beef to the center of the pan
8. Pour the enchilada sauce over and mix lightly
9. Reduce heat to a simmer
10. Sprinkle the olives and green onions over the meat mixture
11. Cover and simmer 10 minutes
12. Remove the cover and spoon several dollops of sour cream over the dish, then sprinkle with the cheese
13. Replace cover and simmer and additional 5 minutes, or until the cheese is melted
