Ingredients:
1 lb lean ground beef
3 cups tomato juice
1 (15 ounce) can chunky tomato sauce
1 (15 ounce) can red kidney beans
2 cups chopped celery
2 cups sliced onions
2 cups butternut squash, cut in 1-inch pieces
1 cup sliced red bell pepper
1 cup sliced zucchini
1 cup sliced mushrooms
1/2 jalapeno chili, finely chopped
2 garlic cloves, minced
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
salt and pepper
6 lime wedges
Directions:
1. Cook ground beef in large skillet over medium heat until browned, about 8 minutes, crumbling with a fork.
2. Combine beef and remaining ingredients, except salt, pepper and lime wedges, in a slow cooker.
3. Cover and cook 6-8 hours.
4. Season to taste with salt and pepper. Serve with lime wedges.
