Ingredients:

Directions:

  1. Saute the onion, garlic and jalapeno (if using) in a saucepan until soft (about 3 minutes).
  2. Add in rice and seasonings; brown the rice just slightly.
  3. Add in whole mushrooms and sliced sausage and enough HOT stock to come 1-inch above the rice.
  4. Cover with a tight-fitting lid.
  5. Bake at 350 degrees for about 35 minutes, or until the liquid is completely absorbed.
  6. Sprinkle with Parmesan cheese and serve.
