using 2.5 cups Morningstar Protein Crumbles (not tofu) also using canned and rinsed chili beans (not shell beans) everything else is the same :)
Ingredients:
1 cup beans, shell, canned
14 oz diced tomatoes
2 1/2 c firm tofu
1 carrot
1/2 onion
1 red bell pepper
8 cloves garlic
1 t olive oil
4 t chili powder
2 t fresh oregano
1 t cumin
1/2 c vegetable broth
Directions:
1. dice the onions, garlic, carrot, and pepper, sautee in olive oil
2. add spices, stir until it starts to smell good
3. add tomatoes and beans, stir
4. add about 1/2 of the broth
5. add crumbles
6. add more broth
7. bring to a boil, then cover and turn down heat
8. simmer till thick
