Very easy to make. The chicken has quite a bite which is tempered by the sour cream-cilantro dip.
Ingredients:
1/4 cup dry breadcrumbs
1 tablespoon chili powder
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1 lb boneless skinless chicken breast, cut into strips
2 tablespoons melted butter
1 cup sour cream
3 tablespoons snipped fresh cilantro
Directions:
1. Soak cocktail size wooden skewers in water for 30 minutes. 2. Combine crumbs and seasonings. 3. Thread chicken onto skewers. 4. Brush with melted butter. 5. Roll in crumb/seasoning mixture. 6. Place in single layer on baking sheet. 7. Bake at 400 for 10 minutes. 8. Stir together sour cream and cilantro and serve as a dip for the chicken.
