Ingredients:
3 eggs
1 cup milk
1/2 cup baking mix
1/2 teaspoon salt
8 ounces canned roasted and peeled green chilies
2 cups tomatoes chopped
2 cups shredded cheddar cheese
Directions:
1. Beat eggs, milk, baking mix and salt until foamy.
2. Remove stems and seeds from chilies then rinse in water.
3. Place in greased baking dish and top with tomatoes and sprinkle with cheese then pour egg mixture over top and bake uncovered at 350 for 45 minutes.
