CHILI OMELET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Johnson Estate in Rowlett, Texas in 1995.
Ingredients:
3 eggs
1 teaspoon butter
1/2 teaspoon cumin
1/4 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon diced red or green pepper
1/2 cup grated sharp cheddar cheese
1/2 cup leftover chili
Directions:
1. Beat eggs, seasonings and peppers in a bowl.
2. Melt butter in a pan over medium heat and pour the egg mixture in.
3. Cover with a lid and allow to set.
4. Flip omelet over and spread with chili then sprinkle cheese over top.
5. Fold omelet in half and cover with lid allowing cheese to melt.
6. Slice in half and serve.
