Hearty spicy macaroni and beef
Ingredients:
1 cup uncooked macaroni (or 2 cups cooked leftover small pasta)
1 pound ground beef (80% lean)
1/2 cup chopped onion
2 cloves garlic (or 1 tsp prechopped jarred garlic)
4 oz chopped green chili pepper (rotel)
15 oz black beans, drained
14 oz diced tomatoes, undrained
11 oz whole kernel corn, drained
8 oz tomato sauce
6 oz tomato paste
1 tablespoon chili powder
1 tsp cumin
1 cup shredded cheddar or monterey jack cheese
Directions:
1. Cook pasta, set aside.
2. Brown beef with garlic and onion in large heavy saucepan.
3. Stir drained pasta into beef mixture, then add all ingredients except cheese. Bring to a boil, then simmer for 20 minutes to heat through, stirring occasionally. Top with cheese.
