Hearty spicy macaroni and beef Ingredients:
1 cup uncooked macaroni (or 2 cups cooked leftover small pasta) |
1 pound ground beef (80% lean) |
1/2 cup chopped onion |
2 cloves garlic (or 1 tsp prechopped jarred garlic) |
4 oz chopped green chili pepper (rotel) |
15 oz black beans, drained |
14 oz diced tomatoes, undrained |
11 oz whole kernel corn, drained |
8 oz tomato sauce |
6 oz tomato paste |
1 tablespoon chili powder |
1 tsp cumin |
1 cup shredded cheddar or monterey jack cheese |
Directions:
1. Cook pasta, set aside. 2. Brown beef with garlic and onion in large heavy saucepan. 3. Stir drained pasta into beef mixture, then add all ingredients except cheese. Bring to a boil, then simmer for 20 minutes to heat through, stirring occasionally. Top with cheese. |
